Cold Brew-Inspired Mousse Dessert

Ingredients:
1-1/2 cups of dark chocolate chips
1 quart of heavy cream
2/3 cup of egg yolks
1/2 cup of simple syrup
1-1/2 cups Powdered sugar
1/2 cup of which ever fruit you want to use
1/2 cup of sugar

Directions
 For the mousse

Step 1: 
Place heavy cream into mixing bowl with whisk attachment. Whip until it comes to a medium peak( until its stiff) then add powdered sugar to your liking. Continue to whip until it's whipped like whipped cream
Step 2:
Take the whipped cream out of the bowl and separate to four bowls( or as many bowls for the flavors you are making)
Step 3:
Wash mixing bowl. And add the egg yolks with the whisk attachment and let whip until it gets nice and fluffy (it will not get as fluffy as the heavy cream)
Step 4:
 While that works grab a small bowl. Take  1/4 cup of water and 1/4 cup of granulated sugar  heat it together in the microwave until nice and hot. This is the simple syrup.
Step 5:
Once the simple syrup is ready slowly pour it into the bowl with the yolks, while it's mixing. Let it continue to mix until t comes to a medium peak.
Step 6:
Once it reaches the peak take it out and add part of the yolk mixture to each of the bowls with the whipped cream.
Step 7
Add the chocolate, and all other flavors one to a bowl. And fold them into the whipped cream and yolk mixture.

 For the Flavor Toppings

Fruit syrup
Step 1: Take a small pot and add of which ever fruit you picked. Add 1/2 cups of sugar. Turn the heat on low.

Step 2:
Once it reaches the peak take it out and add part of the yolk mixture to each of the bowls with the whipped cream.

Chocolate
 Step 1: Put chocolate in a bowl and place in the microwave until it's completely melted. Add to mousse
